Steam Prawn with Chinese Style


Ingredients:

600g of Prawn (Marinate with a pinch sugar after wash)

2-4 cloves of Chopped Garlic

30g of Grated Ginger

5g of Spring Onion

Sauces: 1 tbsp of Sesame Oil, 1 tbsp of Soy sauce, 1 dash of Pepper, 1 tbsp of Shao Shing Wine, 2 Preserved Plum in Brine (Optional)


Instructions:

1) Layer the prawn on a large dish in order. Sprinkle chopped garlic, grated ginger and the prepared sauce on the surface of the prawn.

2) Steam the prawn for 8-10 minutes in a steamer with hot boiled water.

3) Garnish some spring onion onto the prawn and serve.


Recommendation:

* This dish must be served hot and prawn can also be replaced by fish.

* To save time, use ginger paste and garlic paste instead of chopped or grated one.

Pork Belly with Soy Sauce




Ingredients:

600g of pork belly cut into 2 cm thick pieces

200g of beancurd/ tofu

5-10 cloves of garlic

2-5 star anises

1 ½ tbsp of dark soy sauce

1 tbsp of sesame oil

2 tbsp of light soy sauce

1000 ltr of water


Instructions:

1) Boil pork belly with hot water till the outer layer is cook. Then, rinse the pork belly with cold water.

2) Put all ingredients into the pot and cook till the meat is tender (About 15 minutes).

3) Add some salt for flavoring and ready to serve with plain rice.


Recommendations:

Hard boil egg can be added but it is recommend to leave overnight in the pot to taste more delicious.
